Roasted Walnut Cold Pasta

A welcoming way to enjoy your next pasta whether hot or cold, this sauce not only adds flavour it is nutritious with every bite.

Mustard Nut Sauce

Serves 4 portion
Time 5 minutes

Ingredients

3 Tbs mustard
2 Tbs olive oil
6 cherry tomatoes
1 red onion (red) diced
8 black olives
 a handful of walnut, roasted
2 tsp Italian herbs
1 handful fresh parsley (diced)
salt to taste

In a heat pan roast, the nuts for 3- 5 minutes once roasted roughly chop and set aside to cool.

2 Add to a large bowl add honey, oil and mustard, dried herbs and salt and pepper to taste. Mix well to combine and set aside for 5 - 10 minutes

Cook and drain the rigatoni allowing to cook before adding to the mustard mix. 

3. Cut in half the tomatoes and black olives then add to the mix and combine all other ingredients mixing well and serve.
