Raisin Fried Rice

Raisin has always been one we enjoy eating whether on its own, in porridge, bread or combine in many of our dishes. Today we have posted this delicious, sweet fried rice that is not one traditional seen on YouTube or Instagram. We hope that this will be one you would try with your family and friends and share your comments on how well you have enjoyed it as much as we do.

Serves 4
Cooking time 35 minutes

Jasmine rice 

1 1/2 water
1 tsp oil
1/4 tsp salt
2/4 cup rice, rice can be cooked a day ahead
basmati

Fried rice

1/4 red, green, yellow pepper
1/2 onion, medium brown
1 garlic clove, large
1 tsp butter
2 tsp oil
1/2 cup raisins, organic
1 tbs chive, dried
1 tsp pepper, ground
1 tsp salt
1 tsp paprika, smoked
1/4 brown sauce
2 Tbs parsley, fresh
2 Tbs green onions, fresh

Jasmine rice
To a medium pan add water and one teaspoon of oil, bring to a boil. Once at a boiling point add the oil and salt, bring to a boil. Pouring in the rice, adjust the heat to low and cover to steam. By doing it allows the rice to sweat rather than boil.

Allow the rice to sweat until the liquid is about half the placing into to the rice the teabag covering with rice and allow to continue sweating until the rice is fully cooked.  Once cooked remove the tea bag and fluff using a fork and set aside.

Cutting the red, yellow and green peppers into bite-size pieces set aside and continue to cut the onion and garlic.

On medium heat set a frying pan adding butter (1 tsp) and oil. Allow the butter to melt mix with the oil coat the base of the pan.

Add the diced onion and peppers mixing to combine. Mix every 2-3 minutes until the vegetables have wilted then add the garlic and mix.

To the wilted vegetables add the raisin mixing well to combine. Do this until the raisins have developed in size, then add the butter, mix to combine.

Adding to the mix, chives, pepper, salt and paprika mix to combine.

To finish off the raisin fried rice add to the raisin mix the jasmine rice mixing well then add the brown sauce combine and add the parsley and green onions. Mix well then serve hot or allow to cool and enjoy.
