Classic Lasagne

We are going to begin by saying little and just letting the ingredients do all the talking. 
Yummy!!!

Ingredients

Cream Sauce

1 cup ricotta cheese
1 egg
2 Tbs parsley, dried
pinch of salt

In a small mixing bowl pour in the ricotta cheese, egg, salt and parsley mix to combine fully.

Cover with cling film and store into the fridge until all the other ingredients have been prepared for baking.

Lasagne sheets

9 lasagne sheets
4 cups water
pinch of salt

Bring to a boil the water adding in the salt the pouring into a large bowl. 

Begin to place individually the lasagne sheet until the sheet at soft to the touch.

Preheat the oven to about 195 degrees.

Meat Base

1.5 lbs lamb
1 small onion minced
1 can whole tomatoes
1 can diced tomatoes
2 Tsp cornstarch
3 Tbs  sugar
2 Tbs vegetable mix seasoning
3 Tbs dried Italian herbs
1 tsp chilli flakes
3 tsp pepper
4 bay leaves
2 Tbs parsley dried
3 Tbs tomato paste (sun-dried)
1 tsp browning
3 Tbs water
2 cups cheddar cheese


Begin by heating a large pot on medium heat, then pouring in the mince, allow to cook until the mince has been fully cooked, stirring every 2-3 minutes.

Add to the mince the onion, stirring until the onions have wilted. Add half a can of the whole and dice tomatoes allowing to cook, carefully mashing the tomatoes as they are cooking, remember to stir every 2-3 minutes.

Then add the corn starch to the mix, stirring to incorporate in the mix then add the sugar, herbs and mix in well.

Follow by adding in the dried chilli flakes, bay leaves and a heaping spoon of sun-dried tomato paste, giving it that smokey taste you are looking for. Sprinkle in the pepper, parsley and brown sauce, stirring every time an ingredient has been added.

Finishing off by adding the water, then covering allowing to cook on low heat for 5 minutes then set aside to cool.

Assembling

Begin by placing the softened lasagne sheet one at a time covering the base of the baking dish, then completely covering the sheets with the ricotta sauce. Cover the sauce then with a layer of meat mix and top off by covering the meat mix with cheese.

Repeat this process until all the ingredients have been completely layered, covering with foil then placing into the pre-heated oven at about 195 degrees for 20 minutes. Once completed, remove the foil placing the dish back into the oven for another 5 minutes until the cheese begins to turn a light brown colour.

Allow to set in cooling and serve.
