Fish Fritters

These fish fritters are delicious, succulent with crispy edges, easy to pick up for dipping are just eaten on their own. We guarantee you, you will never go wrong just by having these fish fritter alone or served with any mixed salad and dip of choice.

We recommend eating right away, you can make the mixture ahead of time and store it in the fridge overnight, which makes cooking time easier. These can be eaten any time of day and will be enjoyed just as they were freshly made if you have leftovers.

Fish Fritters

2 fish fillets diced of choice
1 1/2 cup plain all-purpose flour
2 Tbs corn starch
2 Tbs sugar
1 egg
1/2 fish sauce
Juice of half a lime
1 small onion peeled
1/4 fresh mix peppers
handful fresh coriander
1/2  Tbs dried chilli flakes
1/2 ground pepper
1 clove garlic crushed
3/4 to 1 cup water
Salt and pepper for seasoning of the fish fillets

Directions
In a shallow bowl season the fish fillet with salt and pepper, set aside to marinate, (this can be done the day before). Dicing in chunks for mixing.

Adding to a medium bowl, add all dried ingredients together, mixing to combine.

Gradually begin to pour the water into the dry mix stirring to combine, If need be, add a bit more water for a loss to a sticky consistency. Dicing in chunks, all fresh ingredients, fish fillets, one egg and salt, mixing well to combine.

Once combined, cover with cling film and store in the fridge for 15 - 20 minutes until the mixture firm up, (thickens). Remove the film then add the fish sauce and combine.

Bring to medium heat a frying pan of oil, once heated begin to spoon the mixture in allowing it to cook evenly on each side until golden brown. Continued this process until all of the mixtures has been fried into the most delicious fritters.

This amount can be easily doubled if you are serving a large family or an event. As recommended before, they or delicious once eaten immediately. They can be stored in an airtight container and reheated.
