Seafood Pie
Here is a wild explosion of seafood which came to mind after viewing my Nan's baked lobsters.
Combining sweet yam and potato created the base and topping which made it easy to cut into after left to set for 10 - 15 minutes.
Instead of baking, steaming or just pan frying , we decide to create this mix into a pie. Allowing the pie to bake to a crisp state gave it a sweet, rich but smoky divine taste which made it so much homier for us. The sensation you experience when biting into a piece conveys a story of the ocean.
4 Baby Squid
4 Scallop
3 Jumbo Prawns
1 Cut Tuna
1 Cut Salmon
1 Sweet Yam
8 Medium size potatoes
1 Leek
3 Tbs butter
1 cup cream
1/2 cup white wine
2 tsp salt
2 tsp blk pepper
3 Tbs dried parsley
1/2 lemon
4 Cups cheese (Gouda)
Start by peeling the yam and potatoes, slicing four potatoes and sweet yam with remaining potatoes for boiling to mash.
In a baking dish layer the potatoes and set aside.
How to make the potato topping by cubing and boiling the remaining potatoes allowing to cook until soft mash with a fork and add to, butter and parsley, set aside.
How to make the cream add to already heated pan 2 Tbs butter, leeks allowing to cook on medium to low heat until wilted. Once this is completed add to pan cream, wine, salt, blk pepper, and parsley stirring throughout. Allow sauce to cook until reduce having a thick consistency then add lemon.
As the sauce starts to bubble begin by adding the scallops, prawn, squid, tuna and, salmon combine until coated. Transfer mix to already prepared dish top with cheese and layer a combination of sweet yam and potato, bake until crisp. (215 c - 35 mins)
Top with already mash potato mix and cheese baking for another 10 minutes until top is golden brown.
