Having to reach for something to cook that would not require hours in the kitchen is such a delight.

In this post is our easy to prepare the chicken sandwich. Below you will find the ingredients that would not only be easy to collect but doing so on a budget.

Begin by collecting:

2 chicken thighs ( any part of the chicken can be used)
2 tbs mayonnaise
1 scallion (diced)
1/4 chilli powder
1 tsp paprika
1/4 turmeric
1 tsp parsley, dried

Salt and pepper for seasoning and oil for frying the chicken

Begin by cleaning and seasoning the chicken with salt and pepper then set it aside for frying.

In a medium frying pan bring the oil to medium heat. Once heated, carefully place the chicken into the pan and fry until both pieces are fried to your desire. Removing from the hot oil, place on to a cooling board to sit before shredding.

Once the chicken pieces are cooled begin to strip the chicken removing any bones. 

Place the chicken pieces into a shredder and shred until the pieces are fine.

In a medium bowl pour in the chicken that has been finely shredded, paprika, parsley, chilli and turmeric, mix well to combine.

Once combined, add to the mix the mayonnaise and mix well to complete the chicken mixture. 

As we have used two pieces of chicken and as a result, this recipe yields two sandwiches. An increase in the number of chicken and condiments can serve a larger family. 

To finish off the chicken sandwiches, we lightly toasted white bread spreading on the chicken mixture and serve.
