Vegetable Pasta Bake



Our week began by using what was left in our fridge to create this pasta bake. It is so amazing how you can just select a handful of items to pull together a delicious meal. Here is our take on pasta vegetable bake.

Pasta  Bake

Serves 4
Time 15 minutes

2 cups pasta
1/2 onion
1/2 pepper, fresh
8 broccoli heads, fresh or frozen
1 cup cheese, cheddar grated
1/4 cup coconut milk
1 tsp turmeric, powder
1 tsp paprika, powder
1 tsp butter
2 garlic cloves crush
1 tsp tarragon, dried
salt for seasoning

Preheat oven to 180 degrees.

1.  Begin by boiling the pasta to the desired softness, once completed, strain and set aside.

2.  Cut into bite side pieces the broccoli then cut the onions and peppers into smaller pieces.

3. In a heated pan, add and melt the butter then add in the pepper, broccoli, onion, dried seasoning and garlic. Mix to combine for five minutes allowing the seasoning to release its aromatic flavours. To finish this process off, add to the pan the coconut milk and mix.

4. Pour into a baking dish the noodles then pour over vegetable mix along with the cheese, mix to combine.

5. Place into a preheated oven and bake for 5 - 10 minutes once completed serve hot or cold.

We were able to have a second portion of this pasta bake the next day, which made it even more delicious. What was served with our meals was pan-fried chicken and freshly baked garlic bread.
