Tofu Toast Breakfast Muffins

396 grams tofu
1 small onion
1/4 pepper (red
1/4 cup broccoli
1/4 cup cheese
salt, for seasoning
1/4 tsp turmeric
1 tsp cardamom
1 tsp butter
1 1/2 tsp olive oil
1 1/2 tortilla wraps
Preheat the oven to 180 degrees
1. Begin by cutting the pepper, broccoli and onions into small pieces.
2. In a heated frying pan, add the butter along with the oil, mix to combine, 2 minutes.
3. Place the vegetables and seasoning into the pan, frying them off to infuse the seasoning. Crumble and mix in the tofu, cook for 5 minutes.
4. Cut into quarter pieces the tortilla wraps, place them into a muffin tray. Filling in with cheese, then the tofu mix. Baking for another 8 minutes and serve.
