Crinkle Chicken Enchiladas




Featured here is another simple and easy way of preparing and cooking a simple meal for your family or group of friends on a low budget. These densely packed enchiladas came together with just a small amount of each ingredient added. Once completed we were able to enjoy them hot and cold as the filling produced six lovely chicken enchiladas.

Spicy Chicken Enchiladas


1 chicken thigh (bone removed)
6 tortilla wraps (white)
2 Cups mixed cheese
1/4 red pepper
1/4 green pepper
1/4 yellow pepper
1 medium onion
2 tomatoes
2 fresh shallots
1 Tbs puree
1/4 cup red beans
1/4 tsp cumin
1/2 tsp cardamom
1/2 tarragon
1/4 chilli powder
1/4 coriander 
1 Tbs butter
1 Tbs oil olive
for seasoning the chicken
1/4 fresh lime juice
(Prep time: 10 minutes)

1.  Set on low heat a frying pan to begin the cooking process on preheating the oven to 180 degrees.

2.  Coat with half a tablespoon of oil and season the chicken allowing to rest for 5 minutes to absorb the seasoning.

3.  Cut into bite-size pieces the peppers, onions, shallots and tomatoes, setting aside.

4.  Place in the already heated pan, the chicken, pan-frying until the chicken is cooked to a caramelised colour on both sides. Once completed, remove and shred using a fork. Place the chicken back into the pan.

5.  Add along with the chicken the dried seasoning stirring to combine, follow along with the peppers, onions, butter and tomato puree, cooking until the vegetables have welted, mixing every 2-3 minutes for 5 minutes

6.  Add the tomato, shallots and beans mixing to combine, keep the heat at a low temperature, mix well for 5 minutes.

7.  Remove the pan from the heat begin to add the cheese (1 3/4 cup) mixing well.

8. Place the mix in the centre of the tortilla wrap begin to wrap creating the shape as seen in the pick below. In a baking dish, coat the base with the remaining oil then place the wraps in topping with the remaining cheese, baking for 15 minutes until baked.

9.  Remove and serve hot or cold.
