Frittata

1 red pepper
1 green pepper
1 potato
1 onion
4 large eggs
1 Tbs butter
1 1/2 tsp olive oil
1 tsp chilli flakes
1 1/2 salt powder
6 vegetable meatballs
1 tsp thyme, fresh
1. Begin by washing and cutting all the vegetables set aside for frying.
2. In a medium-size frying pan add the olive oil and butter allowing to heat. Once heated, carefully place the meatballs in for frying until they are cooked to desire. Remove and set aside.
(do not clean the pan)
3. Pouring into the pan all vegetables. Cook on high heat until the vegetable is brown in colour.
4. In a small bowl add the eggs, chilli flakes, thyme and salt mixing well to fully combine.
5. Once cook, spread the vegetables evenly in the pan, place them in the meatballs, eggs mix and cheese. Cover for 5-8 minutes allowing the egg mix to cook and the cheese has melted.
Serve and enjoy 🎔
This can be eaten any time of the day, because of the quantity we were able to have this for breakfast and a late lunch.
