Super Soul Sunday Chicken Soup

  As the world is challenged right now, this soup is perfect to soothe the soul of the sick. We have decided to re-post this soup for it can be stored for a number of days and reheated.
Here are the ingredients for a serving of four to six depending on the quantity served.

0.5g Chicken
1/2 pepper
1 onion (medium)
 handful thyme
1/4 Squash
2 carrots
2 cloves garlic
2 potatoes
1/4 cabbage
 handful spaghetti 
1 pk soup mix
salt and pepper, for seasoning
8 cups water for cooking

1. Begin by cleaning and seasoning the chicken. Once completed, in a heated frying pan, lightly fry the chicken until they are slightly brown in colour, this should take about 2 minutes.  

2. On a cutting board, cut the chicken into elongated pieces, leaving a bit of meat on the bones.

3. In a large stockpot, place the chicken in, then add the water to begin the cooking process.  Covering to allow the chicken to soften, at this point allow the water to reduce to half the amount (3 cups), then add the garlic and allow to cook covered for 10 minutes.

4. Clean and peel the potatoes, carrots and squash. Cut and dice in bite-size pieces, set aside.

5. Peel, dice the onion and dice the pepper then set aside.

6. Once the chicken stock has been reduced to 3 cups add all the ingredients to the stockpot along with the additional 2 cups of water, cooking for an additional 8 minutes. Allow coming to a boil then break into four pieces, the spaghetti, before adding to the pot. Cover and allow to boil, 5 minutes, or until the spaghetti is softened and the chicken soup thickens inconsistency. 

Sever and enjoy.🎔

This chicken soup can be made and stored in a sealed container and freeze for about two weeks.
