Shrimp Flip Quesadillas

Lime Shrimp Quesadillas

11/2 lbs shrimp
1 cup mozzarella cheese
1/2 Tbs butter
1 onion (medium)
1/2 Tbs lime juice
3/4 tsp fish sauce
2 wrap (seeded)
pepper to taste

1 Start by dicing the onion and setting it aside to be added to the pan later.

2  In a frying pan on medium heat, heat the butter until it begins to melt, then coat the pan evenly. Once completed, add the diced onions, stirring to cook on both sides.

3 Adding to the onions the shrimp, pepper and fish sauce. Stirring to marinate and cook allowing the shrimp to cook to your desire.

4. Pouring into the mix the lime juice and mix with as the filling cooks.

5 In a separate pan bring to a low heat place the wrap in to cook until it begins to brown lightly on both sides and repeat with the second wrap.

6 As the wraps are completely cooked begin to evenly pour on the cheese, then the shrimp mix, sprinkle in the lime juice, then another layer of cheese then place on the second wrap.

7. Allow the wrap to cover to golden brown or until the cheese has melted, then flip the quesadilla to cook on the other side until it is fully cooked.

Cut and serve with your favourite sauce.


This dish is yet another easy to make a meal. It can be eaten for breakfast, lunch or dinner and also filled with any meat or vegetable of choice. Quesadillas are a delight to make that will cost just under eight quid.
