Chicken Roti Mix
With Lime Juice

1 Chicken breast  (cut into cube size pieces, seasoned overnight)
2 cups chickpeas
1 large potato (peel, wash and dice)
1 medium onion (diced)
2 tsp curry mild
1/4 cup coriander (fresh, chopped in chunks)
1 large bay leaf
2 Tbs butter
1 Tbs olive oil
1 Tbs lime juice
1 tsp salt

Pan-fry the chicken breast until they are slightly brown. They can be added without having to pan fry them, but we just like to do this.

1. Begin by setting a large pot on to heat at medium, allowing it to heat. Once heated, add to the pot the oil and butter until the butter has melted. To be the cooking process, add to the pan the onions, salt and curry. Mix well to combine.

2. Adding to the mix, pour in the chickpeas and lime juice mixture to marinate along with the spices. Cover, lower the heat allowing to cook for five minutes.

3. To complete this stage, begin by adding the water, chicken, bay leaf, potatoes and coriander then covering to cook for 20 minutes, increasing the heat to high, until the chickpeas are cooked - soften.

Once completed, serve hot or allow the mix to cool to be wrapped with roti.
