4 chicken thighs (medium)
salt and pepper, for seasoning
Sauce
3 Tbs mustard
3 Tbs honey
1 Begin by Preheating the oven to grill setting at about 150 degrees.
2 In a medium bowl, pour in the mustard and honey mixing well to combine, cover and set aside for basting the BBQ chicken later.
3 Clean and cut the chicken at its joint. By doing this is allows the thighs to be placed flat in the pan for even cooking. Season the chicken with salt and pepper, (this can be done overnight) and set aside.
4. Setting a medium pan to heat. Once heated, place the chicken thigh, skin side down, in the pot pressing firmly to ensure the chicken is flattened for complete cooking. Allow the chicken to roast for 5 minutes on each side until they are fried to a dark brown colour.
5. Once pan-fried to the desired colour, place the chicken thighs in the oven on the racks allowing them to grill for 5 minutes on each side. as this stage is completed, base the chicken thighs with the mustard mix on both sides, then allow to cook for another 5 minutes.
6. Remove from the oven onto a serving tray basting with the remaining sauce, if any remains and serve.
This BBQ chicken can be served hot, cold and can be stored for a day in the fridge. It can also be a stripe and served in salad or wraps.
