Corn Eye Pasta Salad

This is the perfect recipe for that pasta that you just don't want to have to spend hours in the kitchen preparing after a long day at work. With its simple to grab ingredients, you will have this done in no time to serve alongside any of your mains.

Serves 4
Takes 20 minutes 
⠂⠂⠂⠂⠂⠂⠂⠂⠂⠂⠂

1 cup Pasta noodle
1/4 cup corn
2 stalk celery ( cut in bite-size pieces)
2/4 cup mayonnaise
1 tsp mustard powder
2 tsp paprika
 1/2 of each - multi-coloured pepper (roasted and minced)
1 Tbs olive oil
 2 tsp Italian herbs (dried)
salt and pepper to taste

1. In a medium pot, bring to a boil the water. Once the water begins to boil start by pouring in the noodles until they are softened to your desire. Draining off the hot water from the noodles then set aside to cool, once cooled coat lightly with the oil and set aside.

2. In a large bowl begin to make the paste by adding the mayonnaise, corn and all the other ingredients, mixing well to combine.

3. Pouring into the paste, add the pasta, mix well to fulling coat and enjoy!

Time and time this pasta salad has been served with sauteed shrimp or grilled fish at our home but can also be served with any meat of choice. We recommend that once stored in the fridge this can be eaten within the day it has been cooked for freshness.
