Rustic Potatoes
This was actually eaten in one sitting |
1 small red onion sliced
1/4 tsp mint fresh
3/4 cup vegetable stock
1/2 teaspoon cumin
2 garlic cloves
1/2 tsp parsley dried
1/4 tsp turmeric
1/4 tsp chilli pepper
Pinch of salt
Olive oil to sprinkle
Pre-heat the to oven 250C.
1. Place the potatoes in a baking dish, slight smashing, keeping their shape intact.
2. Begin to season the rustic potatoes with all dried ingredients.
Spreading evenly, add the red onions, garlic, mint, salt and sprinkle on the olive oil.
3. Pouring on the vegetable stock covering the rustic potatoes completely.
4. Cover and bake for 20 - 25 minutes or until the broth has reduced. Once at this stage, sprinkle on the cheese then put it back into the oven until the cheese has been completely melted.
