Smokey Bean Bowl
Beans offer many health benefits to our body, moving back and forth where eating is concerned we oftentimes love the joy of a warm bowl of soup. Today, at Gook Cooking we offer a twist of the regular bean stew where we have added a smoky, earthy yet creamy taste.

Our Smoky Bean Bowl is perfect for starters and can also serve as a main meal. It is also an easy soup for children to enjoy for its soothing texture and is prepared on a low budget. The amount posted below will serve two people but can be increased by doubling the ingredients.  The beans that we used were dried, canned can be used as well. This superfood is full of nutrients along with folate, copper, magnesium, iron, zinc and potassium.

2 Cups Red Beans
4 Slices Ginger (Fresh)
2 Tbs Blue cheese (cubes)
2 Tbs mozzarella cheese ball
2 Tbs Leicester and cheddar mix
1 Stalk green onion
1/2 tsp BBQ seasoning
1/2 tsp Dried parsley
1/2 tsp smoked paprika
Vegetable stock
1 Tbs Coconut oil









Start by soaking the beans overnight, If canned risen and stem for about 5 -8 minutes.
Once soaked (as this process reduces the levels of tannins and polyphenols, it enhances our body to absorb the many minerals that are needed) season with salt, cook until tender.

Begin to set your serving bowls with the mozzarella ball thinly sliced. In a separate bowl, mix your cheese mix,  blue cheese, paprika, BBQ seasoning and dried parsley together. Place the mixture in the serving bowl, sprinkle in the green onions. At this stage place, half a tablespoon of coconut oil in each bowl set it aside.

Once the beans have been cooked softly, pour into a blender pulsing until all the been has been liquefied. Pouring the mixture back into a saucepan heat until the mixture boils then pour into the serving bowl covering the cheese mixture. The mixture will form air bubbles as it is poured, not to worry, it is OK. 

This soup is such an amazing starter as mentioned before, once you have tried it you will be amazed by it texture and the hidden gems of cheese as they melt in every bit. It can be served with croutons, freshly baked bread or eaten just on its own and is an ideal soup during winter.
