Nutty Garden Squash
This Soup is absolutely comforting. it is so strange how you can simply combine a small number of ingredients and turn out to be a delight, and also, nutritious. You can also add a combination of veggies of your choice and it will turn out just the same.

Ingredients Soup
1 Medium Organic Squash, diced
3 Cups Organic Spinach
1 medium organic onion, diced
2 Cloves Garlic, crushed
2 Vegetable Stock (organic)
2 tsp Olive oil
3 Cups water (lukewarm)
Directions:
1) Heat a large pan medium to high, start by adding 2 tsp of olive oil. Once heated begin by adding the squash, onions. spinach and onion. Allow this to cook, stir every four to five minutes until the vegetable begins to slightly brown in colour.
2) In a saucepan, allow the water to come to a boil, adding the garlic, stock cube, and all other cooked ingredients, lowering the heat, allowing to cook for 10 minutes.
3) Transfer all the cooked ingredients to a blender, pulse for 3 minutes until completely smooth.
4) Pour mixture into serving bowls and top with any topping of choice and enjoy!
- This soup can be served either hot or cold.
- For storage, store in a tightly sealed container for a maximum of a week.
- If your desire is to serve it a bit thick, pulse for half the time or add a bit more of the listed ingredients.
- Can be batch cooked and frozen, which is one thing we like to do which make it so easy to reach for after a day of work.
