Plum Jam Jelly Joy

Sunset Pride Jelly

A basket of purple jewels. Making this jelly took nothing from my budget which is why I chose to share it here. On a visit to a friend's back garden, set before me was a jewel box standing on a truck. As it bowed in abundance of plums the most joyous of it all was the sorting of two large filled baskets in prep for the jelly.

Ingredients

1 1/2 cup sugar
6 cardamon pod
3 cinnamon sticks
6 cups water
pinch of salt


Methods

Wash and cut in half the plums. Setting on a large pot of water on medium to high heat. Adding in, sugar, spices, salt and plums allowing to come to a boil before lowering the heat to medium heat.

Allow the liquid to reduce stirring every 5-10 minutes. Once the liquid reduces to a thick consistency and the jelly begins to change in colour stir until it thicken to your desire.

Remove from heat, allowing the paste to cool, store in a tightly seal container place in the refrigerator and enjoy anytime of the day.
