Spotted Banana cookies

 Sunday Morning Delights

Waking up to the delight of freshly baked cookies often warms my heart. Lazily picking off a few bananas from a fresh bunch allowing to sit to gain an abundance of ready to bake spots.

3 large bananas mash
1 tsp baking soda
1/2 cup butter
1 cup sugar
2 1/2 cups flour
1 egg
1/2 cinnamon
pinch of salt to taste

Method

Preheat the oven at 180℉. Beat together the butter and sugar ensuring all the sugar granules are fully combined, add the egg and continue to beat until the mixture is light a fluffy.

In a separate bowl, mash the bananas mixing then add the baking soda, mix well and allow to sit for about 2-3 minutes. This allows the baking soda to react with the acid in the bananas. Then, add to the butter mixture.

Whisk the flour, cinnamon and salt together then gradually add to the bananas mixture, mixing until fully combined

Layer parchment paper onto a cookie sheet dropping a spoon full of mixture onto the lined paper. Bake for about 15 - 20 minutes or until golden brown then allows to cool and enjoy.
