Seafood salad |
Seafood is widely eaten by many with an array of
ways to be prepared. What makes it, even more, delight is to be served in different ways and at any time during the day. As with many of our posted meals, this one is yet again a quick meal after that busy day which will be commented on after consumption.
To start this dish we were able to purchase a combination of seafood on a low budget from our local fishmongers with other ingredients to complete it.
Here is our one-off items list in creation on a budget meal
1 medium organic tomato diced
1/2 medium organic onion diced
2 1/2 organic olive oil
1/4 cup white wine
1 Tbs tomato paste
1 1/2 cup organic spaghetti
cockle
Scallops
baby crayfish
mozzarella cheese
1 tsp salt
blk pepper
fresh parsley
To begin, start by heating a medium saucepan on medium heat lightly coating with olive oil.
In a separate pan, bring to a boil four cups of water lightly salted adding in 1/2 tsp of olive oil along with the spaghetti. Allow this to boil until spaghetti is al dente.
In your heated saucepan, start by adding the onions allowing to cook for 3-4 minutes then adding the blk pepper, mixing to combine. Adding in 1/4 cup of wine, allowing to cook off its alcohol content, mix every 2-3 minutes, then add 1/2 teaspoon of salt allowing it to cook.
Once the liquid has reduced to half the amount sprinkle in the tomatoes, and tomato paste stirs to combine.
Adding to the pan, cockles, scallops and crayfish, mix in allowing to cook until lightly firm.
To finish off this dish, combine the spaghetti mixing well to coat. Garnish with cheese fresh dice, in chunks, parsley and olive oil marking this dish one of our guest favourites.
Nothing says complete if not served alongside this is a basket of freshly baked rolls a sun kiss garden salad.
